Anyhow, cut out the portion you’ll need and the rest can go into the refrigerator.
Step 3: Cover The Rest With Cellophane
Now that you know what you’re going to store and it’s already cut out, half of the work is done. This is where you start placing cellophane on each of the sheets.
Double-check to ensure that the pastry sheets aren’t in contact with each other. If it somehow stays in contact, you’ll have a tough time separating these. In the worst-case scenario, it might even break off.

Give The Frozen Puff Pastry Some Time To Thaw
Whether it’s puff pastry or any other kind of dough, you should never start unfolding the plastic wrap immediately. When you start pulling on the wrap, the puff pastry will start cracking.
The best practice is to take it out of the freezer and thaw it in the refrigerator the whole night. Or you could keep it at room temperature for about 30 minutes. Nonetheless, if it were up to me, I’d leave it in the refrigerator overnight.
If It’s Been 30 Minutes, Put It Back In The Refrigerator
This is another crucial mistake people make. They bring out several sheets of puff pastry at once. This isn’t ideal at all.
The thing is, puff pastry is delicate. If you leave it out at room temperature for too long, the butter and other ingredients start to melt. Eventually, this will make the dough sticky and hard to work.
So, bring out one piece at a time.
Dust The Surface With Flour
It doesn’t matter whether you bought the puff pastry or made it by yourself; you have to roll it out to make sure it has a uniform thickness.
Now, if you somehow don’t dust the surface with flour, the dough will stick to the surface, making it very hard to work with. So, make sure to spread some flour on that work surface.
After you’re done rolling and the dough is at the perfect size, remember to clean out all flour off the surface.
Handle The Dough As Little As Possible
Sure, you need to roll the dough and cut it according to your needs. But when you do it too much, the dough becomes a little harder than usual. You lose the light and crispy feeling.
That’s why you need to make sure you’re making use of every minute. Handle the dough as little as possible, and you’ll be good to go.
Set High Temperatures In The Oven
As the name puff pastry suggests, you need to give it some heat if you want the puff. If the temperature is anything below 300°F, chances are it’s going to be flat.
That being said, the perfect temperature would be anything from 375°F to 400°F.

Keep chilled at or below 5 °C. Freeze the day after buying at home. Take in within one month. Thaw overnight in the refrigerator or alternatively for two hours at ambient temperature to defrost.
